Donna I would guess about that too. Keep in mind the dried ginger is sharper and has quite a different flavor than fresh. Did you know you can keep fresh ginger in the freezer indefinitely? I get a bunch of knobs, peel them, and put them in an airtight container in the freezer. It grates well when frozen (those microplane graters are awesome), but you need to grate more than you think 'cause it's very fluffy (like ginger " snow " ) while it's frozen. You can even grate it and pack it into little ice cube trays (you know, those little ones that come in dorm fridge/freezers), then pack the little cubes in an airtight container....
