Probably not very healthy. > > S. Ya know I was going to mention peanut oil. Yep, it's great for high temp frying and I think it's about as healthy as you can get for deep fat frying! I tried to make tostadas one night but I don't think I had deep enough oil. Some of later ones came out crispy, but others came out pretty chewy. I'd like to try that again, and not be afraid to use a deeper pot with more oil.
