I don't see why yellow wouldn't work unless it cooks up too fast or draws water. I would have tried it with yellow squash, I happened to have all the ingredients on hand even the zucchini that's why I tried it when the recipe caught my eye. My sister made it last night with the yellow zucchinis and it came out good. Out here the store calls them golden or sunburst zucchinis. My sister made hers with the Mexican seasoned canned tomatoes. I used the plain and added the spices.
