Fresh beans are best as you can really taste them without being hidden in a bunch of spices. 2 lbs fresh green beans cut into 2 " pieces 2 small white onions (or one large one) cut into thin slices 1-2 cloves garlic, sliced 1 large tomato, chopped (or 1/2 can stewed tomatoes cut up into small pieces) water 1/2 c chopped parsley Saute the sliced onions in 2 tbsp olive oil until tender. Add the garlic and cook for about one minute. Add the green beans, tomato and enough water to just cover everything. Simmer until the beans are tender, then sprinkle on the chopped parsley and incorporate. I served these with a drizzle of tahini mixture (tahini, water and lemon juice), falafel, feta cheese and pita bread. Enjoy! Denise Quote Link to comment Share on other sites More sharing options...
