Guest guest Posted July 26, 2005 Report Share Posted July 26, 2005 I also love to serve these. Makes a good vegetarian main dish when you have Mexican food and the meat is never asked for. I prepare the lasagna noodles the same, drain and I fill them with a thin layer of refried beans, some Mexican rice and a thin slice of the canned ortega chilis and a little grated jack cheese. Instead of spaghetti sauce I use the green verde enchiladas sauce (comes in a can). Poor a little in the pan, then place your roll ups and cover with the green sauce. I sprinkle sliced olives over the top and also chopped green onions and some chopped cilantro. Sprinkle more grated jack cheese.
