Guest guest Posted July 22, 2005 Report Share Posted July 22, 2005 I love using iron skillets. I made these last night for my nephews birthday. He ran by to get them before he went out with his pals. His favorite potato recipe. They are crunchy on the outside and creamy inside. " Screaming Potatoes " 2 l lbs. new small red potatoes (scrubbed) 1 Tablespoon celtic sea salt or kosher salt Place 2 tablespoons of water on bottom of iron skillet. Place potatoes on top of the water. Sprinkle salt over potatoes. Seal pan with lid or tightly cover with foil. Place pan over low heat. Cook 40-50 minutes. Do not remove cover while these are cooking. Occasionally give the pan a shake. This is a great potato recipe for summer, you don't have to heat up the house with the oven. Enjoy!!!!!!!
