Guest guest Posted July 20, 2005 Report Share Posted July 20, 2005 This is a very good simple soup. Perfect for hot summer weather. I got this out of the newspaper many years ago and make it often. " Gazpacho with White Beans " 4 cups tomato juice 1 15 oz. can small white beans, drained and rinsed (navy or cannellini) 1 1/2 cups diced tomatoes 1 cup diced green pepper 1 cup chopped green onions 1 cup chopped cucumber 1/2 cup celery chopped 2 cloves garlic minced 2 tsp. dried basil 1 tsp. dried oregano 2 Tblsp. fresh parsley or cilantro minced 2 tsp. balsamic vinegar squeeze of lime juice salt, pepper and chili powder to taste (usually just a pinch) Place all above ingredients in a large glass bowl and stir to mix, and chill for a few hours so flavors blend.
