Guest guest Posted July 16, 2005 Report Share Posted July 16, 2005 Ack! Doncha hate when you're trying to not waste something and inadvertantly use it in the wrong place?? I had some leftover cornmeal/flour mixture (or so I thought) from a polenta cake I made a while ago. Last night I ended up making tofu cutlets, dredged in egg/water and then in the cornmeal mixture, to which I'd added some lemon pepper seasoning. They baked up fine, but when I tasted them.... eew!!! DH thought they were still good - but all I could taste was the fact that obviously the cornmeal mixture also had sugar in it, and lots of it!!! *lol* I scraped the coating off my tofu, but DH still ate his... I also made zucchini sticks - they were really good! I ran the zukes through a French fry cutter, so they were batons... sauted in olive oil, garlic, and Italian spices... mmm! The other part of the meal was red quinoa cooked in veg. broth, with cumin and corn kernels mixed in.
