Divide evenly, spread 1 cup of hummus on 2 sandwich wraps leaving a two inch broder, and layer with 1 cup grated carrots, 1 thinly sliced Granny Smith apple and 1 cup baby spinach, arranging ingredients in center. Fold in sldes about one inch, then roll tightly from one of the open ends to enclose filling. Wrap in waxed paper, then plastic wrap and refrigerate until ready to eat. Optional: I added some sliced olives, few sprigs of cilantro and a thin slice of onion. " Each morning we are born again. What we do today is what matters most.
