Guest guest
Yay! Jane that's wonderful to hear. This is a great meal when the summer heat gets to you and you can't spend time cooking in a hot kitchen Send in your pate recipe and I'll try it also. You can also add cashew nuts or I was going to mention that white peaches and nectarines are also good in it. Really you can change this recipe all around to suit your taste. If you like raisins those are good too. I even sprinkle walnuts or pine nuts on top and a little ground flaxseed too. It's the balsamic vinegar with the rice and fruit that do it..........Donna Jane <twoslim wrote: This looked so yummy that I made it for lunch today, and it was wonderful. I didn't have black olives so I used green and I also added 1/2 of a peach that I had left over. I put the salad with lettuce in a pita bread and it was great. For the other 1/2 of the pita I added some veggie pate I had in the refrig. I spread on the inside of the pita. That was fabulous also. Thanks for this recipe and I'll type my veggie pate in the next post. Jane > This is my lunch today. I forgot about this rice salad recipe until I ran across it last week. Wonderful for a hot day.
