This recipe is from 1,001 Low Fat Vegetarian Recipes but I changed it a bit. Here's my version: 2 cans red kidney beans, rinsed & drained 1/3 c soy milk 4 tbsp margarine, softened 3/4 c packed brown sugar 3 eggs 1 tsp vanilla 1 cup whole wheat flour 1/2 cup wheat bran 1 tsp baking soda 1/2 tsp salt 1 tsp ground cinnamon 1/2 tsp ground allspice 1/4 tsp ground nutmeg 1/4 tsp ground ginger 3/4 c raisins 1/3-1/2 crushed walnuts (I didn't measure) 1. Process beans and milk in food processor until mixture is smooth. Beat margarine, brown sugar, eggs and vanilla until smooth, beat in bean mixture. Add combined flours, baking soda, salt and spices, mixing just until blended. Mix in raisins and walnuts. 2. Spoon mixture into 24 greased muffin cups and bake at 375 degrees for 20-25 minutes or until toothpick comes out clean. Cool muffins in pans 5 minutes, remove and cool on wire racks. Optional: before baking you can sprinkle muffins with a Cinnamon Streusel: 1/2 c packed brown sugar 2 tbsp quick-cooking oats 2 tbsp flour 1/4 tsp ground cinnamon 2 tbsp cold margarine Combine first four ingredients, then cut in margarine until mixture resembles coarse crumbs. Also Optional: after baking drizzle with a Vanilla Glaze 1 c powdered sugar 1 tsp vanilla 2-3 tbsp soy milk Mix sugar and vanilla with enough milk to make medium glaze consistency.
