I actually re-read the ingredient list to make sure I was reading it

right, too! You can't really taste the beans, well, except I think I

do on a couple of bites but I think that's because my taste buds are

ultra sensative. But James loves these muffins " I didn't even have to

put butter on them, " he stated, so they must be good! LOL

I'm feeling just okay. My nausea seems to last all day now, although

no head in the toilet so far! James was a sweetie and made me a delish

smoothie last night. It seems that I can handle smoothies great, so

maybe I'll be living off them for a while. I've been using soy milk

and dry non-fat milk as my base. I'm trying to get as much non-dairy

protein as possible, but our grocery store hasn't had tofu in months

and I'm already sick of the boca burgers and soysages. Any other

suggestions? 'cause I know that if I continue increasing my cheese

intake I'm going to be gaining the wrong kinds of pounds! I'm even

finding myself turned off of beans and I LOVE beans!!!

Today I am treating myself to a Subway veggie sandwich as it's my one

year anniversary at my job. I'll tell ya, being a vegetarian sure

keeps me from the fast food joints, which this town is laden with!

I've been reading on line about women who crave McD's and eat a ton of

fast food and many of them have gestational diabetes! Yikes!

Maybe I should look for more recipes that sound good in this cookbook

(1,001 Low Fat Vegetarian Recipes). I actually like it better than

Vegetarian Cooking for Everyone because the recipes are simple with

basic ingredients.

cheers,

Denise

like a wonderful recipe. I'll try it soon. I would never think to

put kidney beans in muffins. But then again who would ever think

cantaloupe or sweet potatoes go in sweet breads?
