This is a delicious crunchy rice salad. The dried fruit adds that yummy

sparkle.

 

" Crunchy Wild Rice Salad "

 

Salad ingredients

~~~~~~~~~~~~~

2 cups cooked and cooled wild rice

10 oz. fresh spinach leaves cut in half

1 yellow pepper chopped

1 1/2 cups fresh mushrooms chopped

1 red pepper chopped

2 cups fresh bean sprouts

1/2 onion sliced

1/2 cup almonds slivered

* Optional 1 cup raisins or 1 cup dried cranberries (I use 1/2 cup of each)

 

Soy Dressing

~~~~~~~~~~

 

1/4 cup low sodium soy sauce

1/2 cup light olive oil

2-3 garlic cloves crushed

 

Combine salad ingredients in large bowl and mix lightly.

In a jar with tight fitting lid combine soy dressing ingredients and shake well.

About 1/2 hour before ready to serve dress salad with the dressing, toss and

serve.

 

Serves 6-8
