Guest guest Posted June 30, 2005 Report Share Posted June 30, 2005 This is really easy to make and it's a potluck hit. I worked with a lady that gave me this recipe about 10 yrs. ago. " International Rice Salad " 2 cups cooked white rice (cooled to room temperature) 1 cup frozen peas thawed to room temperature (I don't cook mine but you can steam them) 1 cup shredded or cubed Swiss or Jack cheese (soy cheese works fine too) 1/3 cup of mayonnaise ( vegan or regular) 1/4 cup pimento minced (optional) or 1/4 cup red bell pepper finely chopped (optional) 2 green onions chopped including tops 1 Tblsp. Dijon mustard or brown mustard Place cooled rice in bowl, add remaining ingredients and toss. Chill. When ready to serve line a bowl with lettuce leaves and place rice salad in center.
