You let any potato get exposed to sunlight for any length of time and it will turn green and bitter. http://www.actahort.org/books/38/38_20.htm This link will take you to an explanation of what it is and how it happens and why it is not good for you. I freeze the leftovers in small containers and rewarm it and wrap it in a whole wheat tortilla. Another quick and easy meal. Add rice to it and some walnuts and make a loaf. Lentils -- not just for breakfast anymore. LOL Lisa Marie<-- nuts over lentils.
