Guest guest Posted June 27, 2005 Report Share Posted June 27, 2005 Rice Burgers Yield: 50 six-ounce servings INGREDIENTS: AMOUNT: Brown rice, pre-cooked 12 lbs (24 cups) Bread crumbs, soft 12 oz (6 cups) Vegetables, mixed, finely chopped (celery, squash, carrots, onion, etc) 7 lbs 8 oz (12 cups) Salt and Pepper to taste Vegetable oil 1 cup PROCEDURE: Mix ingredients (except oil) together and form 50 patties about ¾ inch thick using ¾ cup of mixture per patty. Fry in oiled pan for 8 minutes on each side over medium-high heat. Serve alone or on a whole wheat bun or bread with lettuce and condiments.
