Guest guest Posted June 27, 2005 Report Share Posted June 27, 2005 Creamy Date Porridge 4 servings Ingredients: 2 cups soy milk 1 cup oats 1/2 cup chopped pitted dates 1 Tbsp. dark brown sugar 2 Tbsp. distilled white vinegar 1/4 tsp. salt 1 cinnamon stick 3 Tbsp. finely chopped fresh cilantro salt & freshly ground black pepper to taste Instructions Combine in a saucepan over medium heat, bring to a boil and cook, stirring, until mixture is thick and creamy, about 4 minutes. Remove cinnamon stick; stir in 1/2 tsp. vanilla extract. Spoon into bowls and top with 2 Tbsp. chopped walnuts, sliced bananas or apples and plain vegan yogurt, if desired.
