Goes over big at a potluck, I make this as a holiday also. " Spicy Couscous Garden Pie " Crust ~~~~~~~~~~~~~~~~~~~~~~~ 1 cup vegetable broth 1 cup couscous 2 egg whites (beaten) 2 Tbl. chopped parsley or 2 tsp. dried parsley 1 1/2 tsp Tabasco pepper sauce Vegetable filling ~~~~~~~~~~~~~~~~~~~~~~~ 2 Tbl olive oil 1 sm. onion sliced 1 med. yellow squash cut in med. thin rounds 1 med. red or green pepper seeded and cut in slices 1 cup fresh corn kernels 1/2 lb. fresh mushrooms sliced 1 clove garlic minced 4 plum tomatoes chopped 1 1/2 tsp. Tabasco pepper sauce 1 tsp. salt 1 tsp. dried basil 2 cups monterey jack cheese ( I use 1 cup cheese and sprinkle parmesan over top) In med. sauce pan heat broth to a boil, stir in couscous, cover and remove from heat. Let stand. In 5 mins uncover and fluff with fork. Set aside to cool. Grease a 9 inch pie plate, Toss the couscous with egg whites, parsley and Tabasco. Spread mixture in pie plate and up sides of plate. Set aside. Preheat oven to 350 degrees. In skillet over med. heat, in hot oil, cook onion, squash, peppers, corn, mushrooms and garlic about 6 mins. Add tomatoes, Tabasco sauce, salt and basil and cook about 5 mins. more. Toss mixture with 1 1/2 cups cheese. Spoon mixture into couscous crust. Sprinkle with remaining 1/2 cup cheese. bake 25-30 minutes or until crust is firm and cheese is melted. Serves 6-8 " Thank you driver for getting me here, You'll be an inspecrtor, I have no fear.
