I made one last night with kamut pasta (tastes sort of like whole wheat, it's nutty, but it has like 10 grams of protein and 6 grams of fiber in a 1/2 cup serving) and it turned out really well. Even my husband, who doesn't like " grainy things " enjoyed it. There's no real recipe, but I took some cooked pasta (spirals) and chopped fine two green onions, half a cucumber, half a carrot, half a red pepper, then added some olive tapenade (you could use olive slices, too, I just like the way the tapenade kind of melts all through the pasta), generous amounts of extra virgin olive oil and red wine vinegar, salt and pepper, a little italian seasoning and some parmasean cheese.
