The mango muffins turned out great...Donna, mine called for 2 Tbsp of rum, which since I was sending them to school I left out...I used a bit of vanilla instead and mine didn't have cinnamon, it had lime peel..a nice presences with the mango. The kids loved them. Thank you Sarah for the encouragement about baking things any old way - I had batter left over after making 24 mini muffins and boldly put it in a few regular size muffins - just baked them a little longer and it worked fine. I always cooked, and baked especially, to the letter.... but a few years ago I worked in a two-person (hmmm, well I was the third) bakery where the baker and his wife were both non-recipe people. I mean, they had recipes, but rarely used them, and if they were out of something, they just put something else in.... and somehow they always worked!!
