Guest guest Posted June 16, 2005 Report Share Posted June 16, 2005 hi jane, i eliminated wheat out of my diet a little over 4 weeks ago. i have used spelt flour many times over the years with good results. i've made bread, tortillas, cookies, pizza crusts, noodles, and cornbread with it. if you want some of the recipes let me know. spelt is not gluten-free, although it is my understanding that the gluten in spelt is water soluable, so it's better tolerated by people who have problems with wheat. susie --- Jane <twoslim wrote: > Does anyone here cook with spelt flour? In it, she has a list of foods to eliminate (white flour and wheat are on the list) and then re-introduce to your diet in order to determine which foods cause you the most pain. I know that green peppers, tomatoes and eggplant will cause trouble and boy do I love them! Thanks for offering recipes, any time you get to it, it would be of help.
