I usually have a glass of vanilla soy milk or juice first thing when I get up and a granola bar or energy bar later in the morning (my stomach doesn't like food right away). I would love to have a sesame seed bagel and peanut butter or cream cheese every day, but sesame seed bagels are surprisingly hard to find where I live. Don't be afraid of turning bread recipes into muffins, or muffins into bread. I do it all the time, or even at the same time (make a mini loaf and a tray of muffins from the same recipe. You just have to be mindful, of course, that muffins take less time to cook and bread takes more time. And finally, I don't know why, but my favorite early summer meal is a good pasta salad. I made one last night with kamut pasta (tastes sort of like whole wheat, it's nutty, but it has like 10 grams of protein and 6 grams of fiber in a 1/2 cup serving) and it turned out really well. Even my husband, who doesn't like " grainy things " enjoyed it. There's no real recipe, but I took some cooked pasta (spirals) and chopped fine two green onions, half a cucumber, half a carrot, half a red pepper, then added some olive tapenade (you could use olive slices, too, I just like the way the tapenade kind of melts all through the pasta), generous amounts of extra virgin olive oil and red wine vinegar, salt and pepper, a little italian seasoning and some parmasean cheese.
