I have made papaya bread with this same recipe but I also have another good papaya bread recipe I'll post. " Fresh Mango Bread " 2 cups all purpose flour 2 tsp. cinnamon 2 tsp. baking soda 1/2 tsp. Salt 1 cup sugar 2 large eggs 3/4 cup canola oil 2 1/2 cups mangoes, peeled and finely chopped (don't puree) 1 tsp. lemon juice * 1/4 cup nuts or 1/4 raisins are optional (I don't use them) Preheat oven to 350 degrees, grease and flour 2 8X4 loaf pans Combine all the dry ingredients in bowl, stir to mix and set aside. Beat eggs with oil, add to dry ingredients, stir until blended. Fold in lemon juice and mangoes gently until blended. Pour into prepared pans and bake 50-60 minutes, or until toothpick inserted comes out clean. Cool few minutes in pans on wire rack. Remove from pans and continue cooling on wire rack. Exit light.
