I made these for dinner. Really happy I have a leftover for lunch tomorrow.

Very tasty and they kept their round patty shape.

" Chick-Pea Burger Patties "

1 can (15 oz.) chick peas (garbanzo beans) rinsed and drained

1 cup finely shredded carrots

1/3 seasoned dry bread crumbs

2 Tblsp. Italian salad dressing of your choice (I used fat free)

1 egg

* optional I added a few tablespoons of chopped onion

Little bit of canola or olive oil for frying.

Mash chick peas coarsely in a bowl with hand potato masher (I mashed mine by

squeezing, it worked fine), leaving some larger pieces.

Stir in carrots, bread crumbs, dressing and egg.

Shape mixture into 3 med. or 4 small patties.

Heat a little oil in non-stick skillet over medium high. Add patties, cook 3

minutes per side or until browned.

Remove from skillet and serve on bun or as a side dish.

Note: 8 grams of protein per patty if making 4 patties.

oh, Donna, that looks good! I do a similar one with oats instead of

crumbs...but I love the addition of the carrots & am going to blend

yours with mine...
