This was an old standby and it gets raves now when I make it. I think I almost lived on this my first year giving up meat............. " Marvelous Meatless Casserole " 1 cup uncooked rice 3 medium zucchini, thinly sliced 1 14 oz. can green ortega chilies chopped (these are mild ones) 12 oz. grated jack cheese 1 large tomato thinly sliced 1 10-14 oz. package of firm tofu drained well and cut into 1/2 inch cubes 1 tsp. oregano 2 cloves garlic minced 1/4 cup green or red pepper chopped 1/4 green onions chopped salt & pepper to taste Cook rice for 15 minutes in 2 cups of water according to package directiions. Preheat oven to 350 degrees. Steam zucchini until just barely tender and set aide. In a 3 quart greased casserole dish, put a layer of rice, cover with chilies and sprinkle 1/2 the cheese. Add zucchini, then top with tomato slices and salt & papper to taste Combine tofu, green peppers, chopped onions, garlic, oregano and cheese and spoon over the top. Cover and bake for 45 minutes. I uncover it about 15 minutes before ready to take out to brown it. Garnish with chopped fresh cilantro or parsley and serve This serves 5-6.
