Guest guest Posted June 8, 2005 Report Share Posted June 8, 2005 Hot and Sweet Cucumber Pickles 2 English cucumbers (scrubbed and unpeeled) 2 t kosher salt 1/2 cup cider vinegar 1/4 cup sugar 1 T dry mustard 2 t drained horseradish (fresh or jarred) 1 T chopped fresh dill Cut cucumbers crosswise into 1/8 " thick slices, then toss with kosher salt in a bowl and let stand 15 minutes. Rinse and drain cucumbers and let dry. Whisk remaining items together, stir in cukes, and let stand at least 5 minutes.
