Thank you so much for the bread recipe. That is the cookbook that has the kiwi

bread in it, isn't it? I remember the aurthors name when you posted the

luscious kiwi bread. I will try this very soon. The other dessert with the

whipped cream and condensed milk will bother my tummy but I might it for my

nephew and his buddies.

You mentioned lemon with raspberries and I'll bet they would be good tossed into

my beloved lemon bread recipe. Want me to post that one? It's wonderful,

brought it back in a Hawaiian cookbook from a vacation years

crust & spoon filling over the top. Chill or freeze for 6 hours.

Seasonal berry-orange bread (from cookbook by Dimetra Markis)

350 oven - 9X5X3 loaf pan

 

2 1/2 cups unbleached flour, sifted

1 Tbs baking powder

1/2 tsp baking soda

1/2 cup granulated sugar

1/2 tsp salt

1 cup fresh berries (blue, black or raspberries) washed, drained and

tossed in 1/4 cup flour

3 eggs

1/2 cup milk

1/2 cup unsalted butter, melted

1 1/2 Tbs grated orange rind

1/3 cup orange juice (fresh is best)

 

optional topping

1/4 cup orange juice

3 Tbs sugar

 

Sift together flour, baking powder, baking soda, sugar and salt -

add berries and stir gently to mix well. In a separate bowl, beat

eggs. Add milk, melted butter, orange rind & orange juice. Pour

liquid into the dry ingredients and stir till flour is moist..don't

overmix. Spoon into loaf pan and bake an hour - or until pick comes

out clean. Stir together topping ingredients & spoon topping over

it when you take it out of the oven...let bread cool 10 minutes in

pan on wire rack, then remove from pan and cool thoroughly.

 

The smell of this is amazing! I have used black and blue

berries...am thinking substituting lemon juice and rind might be

interesting with raspberries?!

Yes Donna - Her book is a little one called Delicous Quick Breads and

Muffins and it is my stand by for any breads and muffins I ever make -

everythings I've made from it has been a success & the directions are

easy to follow. I just love it...
