Summer Sunshine Pasta Salad (recipe post-vegan)

I double this if making for a potluck or to take along to the park.

 

" Summer Sunshine Pasta Salad "

 

8 oz. wagon wheel or bow tie shaped pasta

1/4 tsp. turmeric

8 oz. small pasta shells

1/3 cup olive oil (1 tblsp. extra)

2 cups broccoli florets blanched

juice and zest of one orange

2 Tblsp. fresh lemon juice

salt to taste

Cayenne pepper to taste

1 yellow bell pepper cut into thin strips

1 sm. red onion chopped

1 cup cherry tomatoes halved

1/4 cup sunflower seeds

1 cup canned kidney beans or chickpeas

 

Cook wagon wheels or bow tie pasta in salt water, while pasta is cooking add the

turmeric to the water to turn pasta bright yellow. Cook tiny shell pasta in

another pot until done. Make sure both pastas are al dente and drain and rinse.

Now place them both in large bowl with broccoli and toss with 1 Tblsp. olive

oil.

To make dressing combine orange juice and zest, lemon juice, salt and cayenne

pepper to taste. Whisk in the remaining 1/3 cup olive oil until blended then

pour over pasta and broccoli. Add the bell pepper, onion and tomatoes and toss.

Chill. When ready to serve toss once and sprinkle sunflower seeds over top.

This serves 4-5

Oh, this sounds like such a refreshing change to the pasta salad that

my dad and sister make all the time. I think it's out of a box and

they use a vinegarette salad dressing with multi colored pasta and

black olives. I don't know, maybe 'cause I've eaten so much since

moving here, but it's starting to kick in the gag reflex.

 

Next potluck/cookout we have, probably Father's Day, I'll let them

know that I'll do the pasta salad. I'm torn on which bean to use as

the kidney beans will give good color but the chickpeas always go

great with pasta. Maybe I'll use both!

 

My broccoli plants are about 6 " -7 " tall and we're getting some great,

hot weather so everything should really start growing! Can't wait to

harvest fresh broccoli from the garden, along with my radishes and

carrots. It'll still be awhile for my tomatoes, though.

 

With temps in the 90's this week, it IS SUMMER!!!! ---Denise
