Guest guest Posted June 6, 2005 Report Share Posted June 6, 2005 Steam: small red new potatoes, carrot chunks, green beans to desired tenderness, shock in ice water to stop the cooking. Mix with a can of rinsed and drained chickpeas, some julienned sundried tomatoes, & chopped fresh tomato. Dressing (all measurements approx - I just winged it): 1/4 c capers, 2 tbsp olive oil, 1/4 c balsamic vinegar, 1 tsp lemon juice, 3 garlic cloves, 1/2 tsp black pepper, 2 tbsp minced fresh parsley - blend til emulsified. Pour dressing over veggies and mix well. Serve over fresh salad greens, with a little goat cheese if you like. Would have been good with avocado too, I think, but I didn't have one.
