This is a hearty soup that's fast to make.

 

" Sopa de Papas Con Chile " (potato souop with green chiles)

 

2 green onions or 1/2 small onion chopped

1 garlic clove minced

1 sm. can green chiles chopped

1 Tblpn. olive oil

1 med. tomato chopped

1 quart vegetable stock

3 med. potatoes peeled and cubed

pinch of dry oregano, salt and pepper

* optional 3 oz. grated jack cheese

 

Saute onion, garlic and chiles in oil until onion is soft. Add the tomato and

simmer for several minutes. Add vegetable stock and the potatoes and cook until

potatoes are soft, about 12 minutes.

Add oregano, salt and pepper. Serve hot in bowls and top with grated cheese if

desired.
