Here is an oatmeal breakfast that I enjoy often. So

far this breakfast is the easiest for me in my

vegetarian transition. I've never been much for the

big bacon and egg breakfasts anyway. Dinner is a bit

more of a challenge, but I am enjoying reading the

ideas posted here.

 

Super Energizing Oatmeal with Berries, Yogurt and Flax

 

1 serving of cooked oatmeal

1/2 cup mixed berries, fresh or frozen

1/2 cup plain lowfat yogurt

1 teaspoon honey

1 tsp ground flax seed

1 flax oil

 

Cook the oatmeal.

To one oatmeal serving top with mixed berries

honey to taste

1/2 cup of lowfat yogurt

sprinkle with flax seed

drizzle flax oil

enjoy!
