Guest guest Posted June 2, 2005 Report Share Posted June 2, 2005 I made seitan last night out of gluten flour and water. It came out mostly well. However, I didn't realize how much it would expand when I boiled it in the broth and it ended up more doughy than I expected. I suppose next time I can cut my pieces much smaller. Are there any tips/ideas to better prepare seitan?
