Kuih Rengas (green leaf fitters) Ingredients : Filling: 1 lb green peas 6 cups water ½ grated coconut 1 cup sugar 3/4 cups brown sugar : 1 tsp. salt ½ cup flour Oil for deep frying Batter: 0.6 lb rice flour 3 cups water ½ tsp. turmeric powder Pinch of salt Serves 6-8 Method: Boil the green peas until they expand. Add more water if necessary. Add the coconut, brown sugar, sugar and salt. Stir until thick. Remove into a mixing bowl. Mix thoroughly with flour. Using a tablespoon, spoon out the mixture and shape into balls. Flatten slightly and keep aside. Prepare batter. Mix together all the ingredients until smooth.
