Baked Parsnips and Apples 1 lb. parsnips, peeled 1/2 tsp. salt 2 apples, peeled, cored & chopped I prefer rRanny Smith 1 cup apple juice 3 tbsp. brown sugar 1/8 tsp. nutmeg, allspice. cinnamon or cardamon Trim the tops off the parsnips. Cut in half lengthwise and remove any woody core. Place in a skillet and cover with water. Add the salt. Bring to a boil and cook until barely tender, about 10 minutes. Drain well and place in a baking dish. Sprinkle with chopped apple, then pour over the apple juice mixed with the brown sugar and your spice of choice. The last pot roast (yes it's meat I know... I'm working on it!) I made I used parsnips, new potato, carrots and vidaila onions. It was sooooo good and we decided that next time we would leave the potatoes out and add more parsnips. Yummy!!
