Hi all:

I am a new member, joined today.

Wow, are there some wonderful recipes out there. I am not a

vegetarian, but love veggies and often eat meatless. I find that

vegetarians know how to treat food, and eat a wider variety of them

than most meat eaters. I figure I'll eat more vegetarian and less meat

if I have access to good recipes. So hello :D I am here to learn and

to share.

I have baked my own wholegrain breads on a wood stove. I have learned

how to rework recipes to fit most dietary restrictions. Sometimes I

personally find that some things are best just not replaced. I can't

eat any kind of sweetener except stevia[ which is ok], but I'd just

rather not have sweets if I can't have sugar/honey/maplesyrup etc..

I did the elimination diet to find out what foods were affecting my

allergies.unfortunately I found out some other things too. the list of

foods I need to avoid for various reasons is long. I am in the

process of searching the files for recipes I can use, and I have

created many recipes on my own. If you are gluten intolerant or react

to any of the stuff on my list, I may have a recipe for you. I would

appreciate any recipes that you have for foods that don't contain the

following items. At the moment I am looking for recipes for main dish

salads[ would love to find more sweet potato salad recipes], and bread

and small grain[ quinoa, amaranth, millet, etc.] recipes. I do make

tabbouleh type brown rice salads[ very yummy]

Here's the list::

Tomatoes, potatoes, eggplant, peppers[ I don't react to dried or

processed ones but that could just be because I eat lesser amounts, so

I 'try' to avoid them], corn, wheat, barley, oats, rye, mushrooms,

caffeine, processed foods[ organic ones are ok],yeast, vinegar, sugar

of any kind[includes natural sweeteners like honey, malt, etc....],

artificial sweeteners, artificial anything, peanuts and chocolate.

to let you know I still eat well, here is one of my own recipes;

rice tabbouleh

4 cups brown rice cooked

I cup cooked whole lentils[optional]

1/2 cup Extra virg olive oil

juice of 2 lemons

2 cooking or 6 green onions chopped small

1 bunch parsley chopped

1 bunch cilantro chopped

1/2 bunch mint chopped[optional]

lovage to taste chopped [optional]

1/2 bunch basil chopped small[optional]

1/2-1 cup toasted walnuts or pine nuts[optional]

1 english cuke[ or peeled slicer] chopped sm[opt]

you can use.. 2 lg tomatoes seeded and chopped

1 cup small chopped celery[optional]

salt and pepper to taste

add veggies to your taste, or other grains, or seeds

mix all, eat
