Guest guest Posted June 2, 2006 Report Share Posted June 2, 2006 Broccoli Latkes 1 lb. broccoli, chopped into small pieces 2 lbs. potatoes, scrubbed and cubed into small pieces 1 large onion, peeled and finely chopped 3 cups water 1/2 tsp. celery seed salt and pepper to taste 4 tbsps. vegetable oil Cook all the ingredients, except the oil, in a large covered pot over medium heat for 20 minutes. Drain mixture. Mash ingredients together. Form 10 pancakes. Heat 2 tbsps. oil in large non-stick frying pan over medium heat. Fry five of the latkes for 8 minutes on one side. Flip and fry for another 5 minutes on the other side. Serve warm. Repeat with remaining oil and latkes. Serves 5. Calories 180 Fat 12 g, Carbs 17 g, Fiber 5 g, Sodium 45 mg.
