Guest guest Posted May 31, 2006 Report Share Posted May 31, 2006 2 cups fresh broccoli or cauliflower flowerets 2 cups 1/4 inch carrot slices 2 cups 2 inch zucchini slices 2 cups 1/2 inch strips green or red bell peppers 1/2 cup dry instant mashed potatoes 1/4 cup grated soy/dairy parmesan cheese 2 Tbs soy butter melted 1/2 Tsp garlic powder 1/4 Tsp dried basil leaves 1 egg Mix in bowl potatoes, cheese, butter, garlic powder, and basil. In shallow bowl beat egg with fork. Put about half the veggies in beaten egg. Remove vegetables 1 piece at a time with slotted spoon or fork. Put veggie mixture on cookie sheet. Repeat above with remaining veggies. Put both cookie sheets into oven. Bake 10 to 12 minuets till lightly brown. Remove immediately from cookie sheet to serving tray. Enjoy!
