Guest guest Posted May 31, 2006 Report Share Posted May 31, 2006 Eggplant (melanzane arrosto) 2 large eggplants, end trimmed, cut widthwise into 1/2 " thick slices salt olive oil pepper Sprinkle eggplant slices lightly with salt. Place in colander or strainer and let stand 1 hour. Wipe excess salt off eggplant. Brush with olive oil and sprinkle with pepper.
