Guest guest Report post Posted May 30, 2006 Zucchini Quiche 4 cup zucchini, sliced 1/8 " thick 2 cups chopped onions 1 egg 8 oz shredded Mozzarella cheese 4 tbs chopped parsley 1/2 tsp basil 1/4 tsp oregano 1/2 tsp salt 1/2 lb butter 1 tsp Dijon mustard Place premade pie crust in 8 " glass pie dish. Spread with mustard. In deep skillet, melt butter. Add zucchini, onions, spices and sautee for 10min. Combine egg and cheese in a big bowl, stir well. put into pie crust.
