My name is Natalie. I'm 26 and have been an official vegetarian for

only 4 months (although I've never been a big meat eater). I've grown

up living all over (Brussels, Moscow, Budapest, Germany, the US...)

and am now living in Louisiana. Its quite difficult finding food to

eat at restaurants here. Everything has shrimp or crawfish it seems -

even salads and soups. I end up with a kiddie-menu grilled cheese

sandwich more times than I wish to admit.

I'm also a type 1 diabetic. I have been for almost 10 years. I'm on

the insulin pump and fortunately I've had no complications due to the

diabetes. I am hoping that a healthy vegetarian lifestyle will keep me

healthy.

Eventhough the diet should help my health, I've chosen to become a

vegetarian because of my " furry children " . I have two white rabbits

that I love more than anything. I guess this makes me an ethical-

vegitarian?

I'm not much of a cook, but love this site for its wonderful (and

often easy) recipes. This weekend I'm going to be trying the

vegetarian goulash.
