I admit that some recipes have much more fat and cholesterol than I would take in. I became a vegetarian in 1973. Shortly after this I saw Dick Gregory give a speech. He said he became grossly overweight after he became a vegetarian. If one eats fried tofu every dayone can also get fat and unhealthy quick. It can happen eating potato chips, which are vegan. A few years ago, a study was done of junk food. The junk food that contained the most fat was popcorn, a vegan food. Also by eating peanut butter sandwiches or by eating cheese sandwiches. If you disregarded the arguments for the environment, animal rights, and karmic conditions, etc. and just left the health reasons for eating, one could make an argument that it would be better to eat a little lean meat and veggies. It would definitely be healthier. We've discussed ghee and butter before. The reports I've seen are inconclusive on how much cholesterol. I have seen reports of none to a fair amount. Most of the saturated fats and virtually all of the toxins are what is discarded when making ghee. In fact, in Ayurveda ghee is recommended for vata and pitta doshas and contraindicated for kapha doshas. It is just as good as olive oil for the skin and internal organs. My son goes to school in India. They eat a lot of fried starchy foods, salt and sugar. Those contribute much more to the rise in diabetes and blood pressure than eating simple ghee if prepared right. Ghee in a subzee or kitcheree is very beneficial to health. I think the people in this group like a variety of recipes. I would like to see some healthy recipes from some of your 300 cookbooks. You must have a lot of great recipes. Do you rent a room to store the cookbooks? I am anxiously awaiting your recipes. Best in Health GB I've over 300 veg'n cookbooks (got a bunch recently sent to me, I'm blessed, in working on those recipes for Howard's book), and picking my favorites from the whole collection would be like picking a favorite child, I suspect. For many, going vegan doesn't happen because of the cheese thing. It was the pus cell count in cheese, let alone the fat and hormones concentrated, that pretty much stopped me. Even now, reading some of the recipes posted here calling for so much cheese, eggs, and butter (clarified butter, ghee, is a major contributer to the rising heart attack rates in domestic Indian communities, btw) cause me to mentally shudder. Anyway, after awhile, I decided to adjust my expectations and taste, once I realized that duplicating cheese in my own kitchen wasn't a viable (and for me, useful) goal. Maybe if you take a veggie sandwich to school you will find some other vegetarians or some people who have been considering it. College food is notoriously bad for you, so you might hit pay dirt. That potato salad Christiane posted sounds great! I love anything with rice wine vinegar in it. We're off to a family event but there will be lots of different things to eat, so I can avoid the grilled meats. I'm in charge of appetizers and for a change of pace from the usual veggie tray/cheese & cracker tray I'm taking some melba rounds with artichoke, arugula, garlic (something else too but I can't think what it is) and the gyro bread and tzaziki I posted a while ago.
