Guest guest Posted May 29, 2006 Report Share Posted May 29, 2006 Caramelized Onions And Pasta 2 tablespoons oil 1 1/2 pounds onions, thinly sliced 1/2 teaspoon salt 1/2 teaspoon sugar 1 teaspoon dried basil leaves or 3 tbsps. fresh torn in small 1/2 teaspoon dried thyme leaves or 3 tspd fresh freshly ground black pepper 1/2 cup water 2 tablespoons balsamic vinegar 12 ounces farfalle or bow-tie noodles grated parmesan cheese, optional In large nonstick skillet heat oil. Add sliced onions and cook over high heat until onions begin to brown, about 10 minutes. If they begin to burn a little, that's ok. too. Lower the heat and add salt, sugar and spices. Cook 10 minutes, stirring often, until onions are uniformly caramel-colored. Add water and vinegar and cover. Simmer while the pasta is cooking. Meanwhile, in a separate pot, bring 3 quarts of water to a boil. Cook pasta al dente. Drain well. Divide pasta equally into 4 heated bowls.
