Fragrant North vegetable Stew

 

This is my favorite it smells so good when it cooks.

 

2 tsp olive oil

1 large onion

3 garlic cloves, minced

1 1/2 toasted ground cumin seeds

1/2 tsp ground cinnamon

1/2 tsp cayenne pepper

1/2 tsp paprika

1 or 2 sweet potato

2 medium zucchini, diced

12 baby carrots, diced

1 can vegetable broth

3 Roma tomatoes, diced

1 green bell pepper, diced

1 can chick peas

1/4 lb mushroom caps, chopped

1/2 cup raisins

 

Heat the oil in a saucepan over medium high heat. saute onions

untill clear in color. Add garlic cook for about one minute. Add

spices and stir together well. Add the potato,carrot,and zucchini.

Stir untill well coated with onion mixture. Add the broth and stir.

lower the heat and cover for 12 to 15 minutes stir every once in a

while. Add the rest of the veggies leaving out the raisins. Cook for

15 mor minuets covered. Add raisins cook 5 more minuets.

 

We put this over white or brown rice. It feeds about 3 to 4 people.

Recipes calls for raisins and cinnamon, I've never tasted those in a

non-dessert.

After I print this I'll make sure to take with me to the grocery store

and pick up the needed ingds. and try soon.
