Guest guest Posted May 25, 2006 Report Share Posted May 25, 2006 Eggless Drepes with Banana Creme Filling Crepes 1 cup flour 1 Tbsp. flax seed meal 1/4 cup honey 1 cup milk or substitute 3 Tbsp. ghee,melted 1 tsp. vanilla extract Filling 1/4 cup ghee 1/4 cup honey 1/4 tsp. cinnamon 1/4 tsp. nutmeg 1/4 cup cream 5 or 6 firm bananas halved lengthwise Mix wet and dry ingreients in separate containers. Mix together. You may need more liquid to make crepe batter. Put about 3 Tbsp. of batter into lightly oiled 6 inch cast iron fry pan. Spread until batter almost covers bottom. Do it fast so it will not stick to bottom. I used medium heat. Turn when golden brown on bottom and turn and take off when golden brown on other side. Makes 5-6 crepes. For filling, heat burner to medium low. Put in ghee and add all the other ingredients andheat for 2-3 minutes. Add bananas and cook for another minute while gently stirring. Put a banana half in each crepe. Spoon sauce over banana and roll up crepe. Serve with as is or with whipped cream and a dash of cinnamon or nutmeg if desired.
