Guest guest Posted May 24, 2006 Report Share Posted May 24, 2006 Filbert Potato Cakes The cakes are good plain or accompanied by a sauce, you can make them smaller and serve as appetizers with a spicy dipping sauce, salsa. 4 cups unseasoned mashed potatoes 1/4 cup onion, minced 3/4 cup filberts, ground in a blender 1/2 cup whole wheat bread crumbs 1/2 tsps. sage 1 tsp. savory 3 tbsps. miso 3 tbsps. parsley 1/3 cup whole wheat pastry flour olive oil Make sure the nuts are ground into small pieces. Place the potatoes, onion, ground filberts, bread crumbs sage, savory, miso and parsley in a large bowl. Mix well. Shape the mixture into hamburger-sized cakes, of about 1/2-inch thickness.
