Guest guest Posted May 22, 2006 Report Share Posted May 22, 2006 Spinach Penne 4 cups penne 3 tablespoons olive oil 1 onion, chopped 2 garlic cloves, minced 1 teaspoon dried thyme 1 teaspoon dried oregano 10 ounces fresh spinach, chopped 1/4 cup stock vegetable 1 teaspoon lemon juice 1/2 teaspoon salt 1/2 teaspoon pepper 1/2 cup light cottage cheese In large pot of boiling salted water, cook pasta for 8-10 minutes or until tender but firm. Drain well and return to pot. Meanwhile, in large skillet, heat 2 tb of the oil over medium heat; cook onion, garlic, thyme and oregano, stirring occasionally, for about 5 minutes or until onions are softened. Add to pasta along with remaining oil, spinach, stock, lemon juice, salt and pepper; toss to coat well. Cook over low heat for about 4 minutes or until spinach is wilted. Stir in cottage cheese.
