Guest guest Posted May 21, 2006 Report Share Posted May 21, 2006 This makes a cake-like topping rather then a sconey or crumbly one. 1/2 cup all-purpose flour (I have used 1/4 wheat 1/4 reg with success) 1/2 cup sugar 3/4 tsp baking powder 1/4 tsp salt 2 Tbs butter, melted and cooled 1 large egg 1 tsp vanilla Mix together dry ingredients. Add butter, egg and vanilla. Stir until well blended. Spoon over your chosen fruit mixture. Bake at 400 until lightly golden, about 35 minutes. Cool slightly. Eat happily. Good fruit fillings: strawberry - rhubarb peach - apricot blueberry pear pear - apple Just chop enough fruit to fill a medium casserole dish and toss with a tiny bit of sugar if desired.
