Guest guest Posted May 21, 2006 Report Share Posted May 21, 2006 Cabbage, Beet and Apple Slaw 6 cups thinly sliced cabbage 3/4 cup coarsely shredded carrot 3/4 cup coarsely shredded raw beets 1/4 cup finely chopped red onion 1 large or 2 small apples, shredded 6 tablespoons light mayonnaise 1/4 cup plain low-fat yogurt 3 tablespoons cider vinegar 1 1/2 tablespoons honey salt and freshly ground pepper, to taste In a large bowl, combine cabbage, carrot, beets, onion and apple in a large bowl. To prepare dressing, whisk together light mayonnaise, yogurt, vinegar and honey in a small bowl. Pour over vegetables and toss with dressing until well-mixed. Season to taste with salt and pepper. Makes 6 to 8 servings. Calories 90, Protein 2 g, Fat 4 g, Carbohydrate 13 g, Fiber 3 g, Sodium 117 mg, Cholesterol less than 1 mg. Points 2.
