Guest guest Posted May 20, 2006 Report Share Posted May 20, 2006 Rustic Pasta 4 tablespoons olive oil 2 garlic cloves, minced 1 large onion, sliced 2 yellow or red bell peppers (or 1 of each), cut into julienne strips 1 pound fettucine, cooked and drained 2 cups cooked and drained black beans salt and pepper to taste 2 cups cooked broccoli florets, without stems 1/4 cup minced fresh basil, or 1 teaspoon dried basil 2 teaspoons minced fresh oregano, or 1/2 teaspoon dried oregano grated parmesan cheese Heat 3 tablespoons of the oil in a large skillet, and saute the garlic, onion, and peppers just until they are limp. Stir in the black beans, and season the mixture with salt and pepper. Cook the broccoli in rapidly boiling salted water for about 7 minutes, or until it is just tender. Drain it. Toss the hot fettucine with the remaining 1 tablespoon olive oil. Add the vegetable mixture, and toss again. Garnish with parmesan cheese and serve. Serves 6.
