beet green brussel sprout roast

8 cloves garlic chopped and mixed with 4 Tbsp olive oil, 2 tsp paprika, Salt

and pepper to taste. Reserve half of mixture.

1/2 white or yellow onion cut into slices

3-4 large red potatoes skin on, cut into med large cubes

6 beets, stems and leaves cut and chopped.- or substitute fresh chopped

spinach

2 packages italian mushrooms

1 package frozen petite brussel sprouts defrosted- use fresh if in season

Preheat oven to 400 F

Layer and mix ingredients 1-5 in orderlisted

Add brussel sprouts to top and pour remaining garlic mixture over top.

Sprinkle with grated parmesean and paprika and cover with aluminium foil for

about 25 minutes or untill potatoes areclose to preference of softness. Remove

foil and let brown or until potatoes are cooked to liking. The sprouts shoul

have a nice roasted look. I love garlic, you may reduce if wanted. I will

pulse garlic and oil misture togeter so the oil gets a merky or creamy look but

not pureed for a better flavor. Sometimes I will drop a few whole cloves of

garlic in to roast.

 

As you know the house will be filled with garlic- no wonder that I am still

single!!!! LOLOLO
